FAQ: Quality assurance and production
Carletti performs a risk analysis. A systematic approach is done considering:
- Key and alarm codes list
- Access points to building closed
- Guest policy
- Raw material inspection at arrival
- Locked stations for receiving fluid raw materials
- Returned goods policy
- Water drilling secured by lock
- Chemicals stored under lock
- Foreign technician policy
- Risk of sabotage
- IT security and cybercrime precautions
- Training of personnel in site security
- Recruitment of personnel is done personally by responsible manager
Frequency for updating risk analysis:
- Yearly
- Substantial changes to buildings or access procedures
Carletti A/S hereby declare that all raw materials brought to Carletti A/S are risk assessed concerning the risk of fraudulent attempts to alter the nature, substance or the quality expected of the raw material.
Carletti A/S is certified to the IFS for foods and meets thereby the requirements concerning authenticity and food fraud assessment given in this standard.
The Quality Management system of Carletti A/S is certified per the IFS standards. Carletti A/S has chosen these certifications, as it is recognized by the GFSI.
Our certification ensures that our management system including traceability is systematically audited by a 3rd party certification company.
We operate under EU-legislation, where traceability is also a standard legislative demand, and we are audited by Danish authorities on a regular basis. Carletti A/S has been met by a few requests from customers asking us to perform traceability testing on batches delivered to them. Carletti A/S does not agree to perform this kind of exercise, as we think that our traceability system is verified by the means described here. We test our traceability in exercises and as part of our internal audit program. Our exercises are set up to test our traceability systems back and forth - and test the ability to account for delivered amounts of raw materials - produced amounts of products (sold, discarded, in stock etc.) and to which customers the products have been sent.

8 visits per year + 4 quality inspections.

Carletti A/S hereby confirms that procedures for glass and hard plastic are in place in order to protect products against contamination with glass and hard plastic.
All glass and hard plastic in production and packaging areas are registered and routine inspections are carried out; Three times a year all glass and hard plastic are checked, every second month critical point are checked and point directly above production are checked daily.
We also confirm that a procedure regarding breakage and reporting.
Procedure is in place regarding handling of wooden pallets.
