Monitoring program:

We carry out microbiological analyses in our internal, not accredited laboratory on a weekly basis. The samples analyzed are randomly selected samples produced at our production site.

Our monitoring program also covers:

  • Raw materials used for production of finished goods
  • Environment: Swab samples for coliforms on production equipment
  • Environment: Analyzes for coliform bacteria in water used as raw material and for cleaning
  • Environment: Precipitation samples analyzed for total plate count, yeast and mold
  • Environment: Analysis of compressed air used for production
  • Allergens: Selected samples are analyzed to ensure correct trace labelling
  • Hygiene: Hand hygiene test

Salmonella monitoring program 

Carletti A/S has a Salmonella monitoring program that covers selected chocolates and finished products.

Salmonella analyzes are carried out in external, accredited laboratory.

Furthermore, we randomly monitor the equipment and environment regarding Salmonella and all staff members fill in and sign a health certificate before hiring
